What is the perfect pizza?

Not in New England. I cannot help it. I know in my bones that the perfect pizza is nowhere to be found outside the five boroughs of New York. Brooklyn, last I knew, had the best of the best. The perfect pizza has a thin, slightly crispy (but not hard) crust. Plenty of sauce and lots of cheese. Mozzerella and  parmesan. Maybe romano too.

Toppings? Whatever you like except — I vote with Terry Pratchett on this one — pineapple. Pineapple has no place on a pizza. You can argue with me until we are both too old to care. Pineapple is a great fruit, but fruit doesn’t go on pizza. No fruit. On. Pizza.

Moreover. Great pizza is hand tossed, then baked in a coal-fired oven. Nothing else comes near it. I can smell it in my dreams …

Meanwhile, it being a long way to New York, we eat pretty much any pizza. With exceptions. Most of it is okay. Imperfect, but edible.

What is your favorite time of day?

Although I sleep through it most days, just around daybreak is my favorite time of day.

Even if I’m only away for a few moments of it, there’ something different about the light as it comes up over the horizon.

Show us two of your favorites photographs?  The photos can be from anytime in your life span.  Explain why they are your favorite.

I have over 100,000 photographs and I don’t even remember most of them. Thus, because dawn was the subject of the last question, I will give you my two favorite pictures taken at sunrise.

In this first pictures, I saw the sun and the cloud would intersect and I waited until the exact moment when it happened. Patience was rewarded! I endured a million mosquitoes, but got a dozen pictures that are still among my all-time favorites. Moments like this can’t be repeated.

Taken originally in 2010, both my equipment and my technique have vastly improved … but you can’t repeat the moment.

The second picture was taken at almost the same time of day on the beach in Ogunquit, Maine. I took a few dozen pictures that morning and all of them are favorites, but this one, with the mist still hanging over the beach, is a favorite.

  2. Perfect pizza is like the perfect song; everyone has their favorite.
    My utterly worst pizza was in upstate New York, delivered to the motel I was staying at. It had cheese the consistency of wallpaper paste (but not as good) and was obviously a dye job, since it colored everything it touched, with orange; the topping was red, and there was stuff floating on it but it bore no resemblance to anything even close to pizza.

    I agree, however, about the pineapple. I’d like to put in a vote against anchovies as well, since they tend to flavor anything else and the evening, too.

    • Garry would argue for anchovies (he loves them) but I’m with you. I figure he can buy his own anchovies and put them on HIS slices. We both scorn pineapple as being a fruit that belongs in fruit salad. Once, just to be a good sport, I tasted “Hawaiian pizza.” It may have been Hawaiian, but it wasn’t pizza.

      • I agree, he can put his anchovies on HIS pizza, it’s surely not coming near mine.

        My husband ordered an anchovy pizza once, had no idea what they were, and we had to toss the whole thing. and air out the car.
        I used to be able to snarf down an onion/ sausage pizza without a second thought (and yes Ill have that extra slice if you’re not using it) but age caught me up and now I get the ‘careful’ pizza with no onions. Sob.

        However I do love pizza the next morning cold for breakfast. Beats toast any day.

  4. I agree 100% with your opinion regarding pineapple on pizza. I would also ban ground beef. I love simple pizza, what we call All Dressed here. It is topped with pepperoni cheese mushrooms and green peppers. That’s it.

  6. Perfect pizza is according to taste, but I am with you with the fruit. I am not all that for meat on the pizza, but I usually put some smoked dried swiss ham on it – not too much. I quite like it with aubergine, but am the only family member that really likes aubergine, so no aubergine. I too have so many photos, I cannot pick a favourite. I like the strange photos most of all.

  8. The perfect pizza is found in the little pizzeria in Vatican City, Rome. They have a traditional recipe passed down through generations. The bread melts in the mouth with enough topping to make you melt like the cheese…

      • Not really, Marilyn, I made that up. I’ve never had a New York pizza, but if Frankie & Benny’s is anything to go by there just aren’t enough toppings on the dough. Los Angeles pizza was smothered in cheese and loads of pepperoni, with the crispest base I’ve ever had anywhere. A dream of a pizza from a family run Italian restaurant.

          • Two Sicilians who opened a restaurant in New York in the 1940’s and now have a chain all over the world. As Jim Morrison pointed out, you know when you’re in New York and someone gives you a joint cos you can pick your teeth with a New York joint! F&B’s scrimp on the portions which is why I’d rather eat in a Hard Rock or TGI Friday’s.

        We don’t live in NYC or Boston.
        We live in Uxbridge.
        We’ve found some decent frozen pizzas.
